Ingredients: |
• 250 g Mushrooms (chopped)
• 300 g Chicken
• 3 Green Chilies
• 3 Garlic Cloves
• 1½ cups Onion (chopped)
• 1 inch piece of Ginger (chopped)
• ½ tsp Pepper Powder
• ½ tsp Garam Masala
• ¼ tsp Turmeric Powder
• Salt (to taste)
• 2 tbsp Oil |

How to make Chicken Mushroom: |
• | Combine chicken with little turmeric powder, enough water, and salt in a pressure cooker and cook until tender. Separate the bones and meat. |
• | Slice the meat into small pieces. |
• | Heat oil in a pan and fry green chilies, ginger, garlic, and onions. |
• | Add garam masala, pepper powder, and turmeric powder. Mix and cook well. |
• | Add mushrooms and stir well. |
• | Flavor with salt to taste and cook covered for 10 minutes. |
• | Add chicken and cook for another 6-8 minutes, stirring continuously. |
• | Serve hot with rice. |

• 1/4 Cup small onion dices
• 1/4 Cup flour
• 1/2 tsp Salt
• 1/2 tsp Pepper
• 2 Cups Chicken broth
• 2 Cups Whole milk
• 1 Cup heavy cream
• 1/2 tsp Worcestershire sauce
• Minced chives, to decorate |

How to make Chicken and Mushroom Cream Soup: |
• | Clean and remove ends of mushroom stems and then slice mushrooms. |
• | Take a medium frying pan and melt the butter in it. |
• | Add mushroom slices and onion dices. Cook till brown. |
• | Mix in flour, salt and pepper. |
• | Transfer into a large casserole. |
• | Pour in chicken broth, milk, cream and Worcestershire sauce. |
• | Simmer over medium heat without boiling, stirring until really hot. |
• | Serve into individual bowls, sprinkled with chives. |

• 1 pound White Button Mushrooms (halved or quartered)
• 1 tbsp Olive Oil
• 1 tsp Lemon Juice
• ¾ cup Red Bell Pepper (finely chopped)
• ½ cup Fresh Basil or Mint Leaves (torn)
• ¼ cup Pine Nuts (toasted)
• 4 Lettuce Leaves
For Dressing
• 2 tbsp Extra-virgin Olive Oil
• 1 tbsp Balsamic Vinegar or Lemon Juice
• 1 large Garlic Clove (crushed)

How to make Mushroom Salad: |
• | Preheat oven to 400°F. |
• | Mix together mushrooms, olive oil and lemon juice. |
• | Place them on a large baking sheet. |
• | Bake for 15 minutes. |
• | Remove and drain the liquid. Cool the mixture slightly. |
• | Take a large mixing bowl and mix mushrooms, red bell pepper, basil or mint and pine nuts. |
• | Combine together extra-virgin olive oil, vinegar or lemon juice, garlic and salt in another bowl. |
• | Toss the dressing into the mushrooms. |
• | Place lettuce leaves on a serving plate and spoon the mushroom mixture on top. |
