Ingredients:
• 250 g Mushrooms (chopped)
• 300 g Chicken
• 3 Green Chilies
• 3 Garlic Cloves
• 1½ cups Onion (chopped)
• 1 inch piece of Ginger (chopped)
• ½ tsp Pepper Powder
• ½ tsp Garam Masala
• ¼ tsp Turmeric Powder
• Salt (to taste)
• 2 tbsp Oil
How to make Chicken Mushroom:
Combine chicken with little turmeric powder, enough water, and salt in a pressure cooker and cook until tender. Separate the bones and meat.
Slice the meat into small pieces.
Heat oil in a pan and fry green chilies, ginger, garlic, and onions.
Add garam masala, pepper powder, and turmeric powder. Mix and cook well.
Add mushrooms and stir well.
Flavor with salt to taste and cook covered for 10 minutes.
Add chicken and cook for another 6-8 minutes, stirring continuously.
Serve hot with rice.

Ingredients:
• 2 Cups fresh mushroom slices
• 60 gm Butter
• 1/4 Cup small onion dices
• 1/4 Cup flour
• 1/2 tsp Salt
• 1/2 tsp Pepper
• 2 Cups Chicken broth
• 2 Cups Whole milk
• 1 Cup heavy cream
• 1/2 tsp Worcestershire sauce
• Minced chives, to decorate
How to make Chicken and Mushroom Cream Soup:
Clean and remove ends of mushroom stems and then slice mushrooms.
Take a medium frying pan and melt the butter in it.
Add mushroom slices and onion dices. Cook till brown.
Mix in flour, salt and pepper.
Transfer into a large casserole.
Pour in chicken broth, milk, cream and Worcestershire sauce.
Simmer over medium heat without boiling, stirring until really hot.
Serve into individual bowls, sprinkled with chives.

Ingredients:
• 1 pound White Button Mushrooms (halved or quartered)
• 1 tbsp Olive Oil
• 1 tsp Lemon Juice
• ¾ cup Red Bell Pepper (finely chopped)
• ½ cup Fresh Basil or Mint Leaves (torn)
• ¼ cup Pine Nuts (toasted)
• 4 Lettuce Leaves

For Dressing
• 2 tbsp Extra-virgin Olive Oil
• 1 tbsp Balsamic Vinegar or Lemon Juice
• 1 large Garlic Clove (crushed)
• Salt (to taste)
How to make Mushroom Salad:
Preheat oven to 400°F.
Mix together mushrooms, olive oil and lemon juice.
Place them on a large baking sheet.
Bake for 15 minutes.
Remove and drain the liquid. Cool the mixture slightly.
Take a large mixing bowl and mix mushrooms, red bell pepper, basil or mint and pine nuts.
Combine together extra-virgin olive oil, vinegar or lemon juice, garlic and salt in another bowl.
Toss the dressing into the mushrooms.
Place lettuce leaves on a serving plate and spoon the mushroom mixture on top.
